Caribbean Spiced Prosciutto-Wrapped Scallop Skewers

Howdy, readers!  I’m putting Friday Favorites on hold this week because boy have I got something special to show you!  My day got really spicy yesterday when a crate full of All Spice Cafe hot sauces showed up…

…a beautiful wooden box with a trio of caribbean spice, cayenne habanero, and chipotle garlic hot sauces.  Everything about the packaging and presentation was perfect.  A recipe sheet and All Spice Cafe sticker even came in the bottom of the box.  I love fun surprises like that!

In no time flat, I was in the kitchen experimenting with some scallops.  When JD Cowles, the mustachioed man on the label, tweeted me to suggest the Caribbean Spiced Scallops, I was hooked.  But I wanted to put a special “spin” on them.  So I stopped at the store for some prosciutto.  And then I set out to make Caribbean Spiced Prosciutto-wrapped Scallop Skewers.  Doesn’t that sound mouth-watering?  In case you’re not salivating yet, let me assure you that they are a balanced combination of salt and spice.  Thanks to the nutmeg and cinnamon undertones of the hot sauce, they also have a subtle sweetness.  And it was so fun to have them on a stick!  It was like gourmet street food!  Quick, reserve “SpicyScallopSkewerGirl” on twitter, maybe I’ll sell my soul to the Street Food movement.

In case, you can’t resist, here’s the recipe:

(Oh no!  There goes my claim to fame as a street food vendor…)

Caribbean Spiced Prosciutto-Wrapped Scallop Skewers

1. Large Sea Scallops
2. Butter
3. All Spice Cafe Caribbean Spice Hot Sauce
4. Prosciutto
5. Bamboo Skewers

In a small frying pan, melt about 1tbsp butter (for every 1 lb of scallops).  Add 1 tbsp of All Spice Cafe Caribbean Spice Hot Sauce.  Add the scallops, searing gently for about 3 minutes on each side.  Turn off heat.  Wrap scallops in thin slices of prosciutto and place on skewers.  Spoon remaining sauce over the scallops and bake for 15 minutes at 350 degrees.  Prosciutto should be crispy.  Serves 2.


Thanks, All Spice Cafe!  I’ll be back next Friday with another recipe featuring their Cayenne Habanero Hot Sauce!  In the meantime, perhaps you’ll consider All Spice Cafe as one-stop shopping for your hot-and-spicy friends and family members?  I know they sauces have earned a special place in my refrigerator – and in my heart!
